Inspired by Indian Poha, this rice is made with peanuts, pomegranate seeds, chopped green chilly, onion, lime, coriander leaves, curry leaves and Turmeric Active.

Ingredients:

1 cup basmati rice
2 cups chicken broth
½ cup pomegranate seeds
¼ cup crushed peanuts
1 scallion, thinly sliced
3 coriander leaves
3 curry leaves
1 small onion, thinly sliced
1 small green chilli, thinly sliced
1 garlic clove, peeled, crushed
2 tablespoons olive oil
1 scoop Turmeric Active
Salt and pepper

Instructions:

Place uncooked rice in the cooking pot. Add enough water to cover the top.
Wash the rice and drain. Place in a separate bowl or container.
Add onion, garlic and oil in cooking pot. Cover and cook for 3 minutes or until softened and golden brown.
Add rice and Turmeric Active (making sure to coat the rice).  Add in curry leaves, coriander leaves and then add chicken broth.
Cover and cook in microwave 8-10 minutes.
Remove cover and cook for 4 minutes.
Run a fork through the rice, making sure the rice is tender and fluffy.
Fold in pomegranate seeds, scallions, green chilli and crushed peanuts; season with salt and pepper. Let sit for 2-3 mins. Remove coriander and curry leaves.
Serve and enjoy.
